Well, today I’m here with an idea to revolutionize the way you pack & eat lunch!
Meet my Lunch Bunch!
These are my work wives! They listen to me vent about frustrating moments in the classroom, funny stories that happen at home {and in the classroom} and will call me out when I’m wrong! These are my people!
So last Spring we were all complaining about how much we hate to pack lunches and an idea was born – our Lunch Bunch!
Each week, one of us is responsible for bringing enough food to feed us all for two days! It’s totally up to each person for what we bring. It’s always fun to see what others cook! Bonus: we even get dessert!
Favorite Recipes for Lunch Bunch
Cauliflower Lentil Tacos
Cauliflower Lentil Tacos are seriously one of my favorite meals! I’ve made the recipe even simpler by subbing a few of the ingredients! It’s a crowd pleaser and makes A TON! It may even last more than two days!
Tomato Basil Pasta Bake
A few weeks ago, I saw this recipe for a Tomato Basil Pasta Bake pop up in my Facebook feed from BuzzFeed. We’re fortunate to have an oven in our staff room, so I was able to whip this up during recess time. Our Secretary {who is amazing!} offered to throw it into the oven for me so that it was warm when we all showed up for lunch.
The smell wafting through the staff room was awesome! I brought some salad and Angel Food cake to finish up the meal. There were so many leftovers that we easily ate it on Tuesday, too!
Vegetarian Quinoa Chili
Cooler weather means it’s soup {and boot!} season! Whip up this delicious Quinoa Chili. Very simple ingredients and directions. Serve with a little cornbread on the side & you are the Staff Room hero!

Lisa’s {Bachelorette} Thai Noodles
Okay, so this really isn’t the name of this recipe. However, like 10 years ago, I went to my friend Lisa’s bachelorette party in Napa. Her sister made this dish and I’ve been dreaming of it since!
So, when it was Lisa’s Lunch Bunch day…she made the noodles! You guys…these noodles are legit delicious. The trick to the deliciousness {is that a word?!} is to leave the noodles marinating overnight! How easy, right? The perfect dish for your Lunch Bunch!
It’s also worth mentioning that the right noodles make a HUGE difference! Keep an eye out for these DeCecco Bucatini. They’re sold over on Amazon, but {oddly} they are much pricier than at your local grocery store!
